Troppo Top End Gin is our first gin in the range that we settled on, with the recipe locked in late 2020. Lucky we did, in early 2021, it was awarded a silver medal at the International Wine and Spirits Competition in London, one of the oldest and most respected spirits competitions in the world.
Obviously we were pretty excited to see our baby recognised as one of the highest rated contemporary gins in Australia.
Our beautiful baby, is for this who want something totally unique. A taste of the tropics, a taste of our little paradise. The recipe was created around both traditional botanicals and local botanical, which we use everyday, and often, are sustainably sourced as waste products from our restaurants.
On the traditional side we use juniper, organic coriander seed from Australia, orris root & angelica root.
From us here, we use lemongrass which we grow, kaffir lime leaves from the mother in laws house, ruby grapefruit peel and lime peels, which are sustainable sourced from the Snapper Rocks and Hot Tamale (our sister restaurants), local ginger and turmeric & Kensington pride mangos from Berry Springs.
Its far from the standard traditional gin, but we love it & we are sure you will too.
Aroma : Fragrant kaffir lime citrus and ruby grapefruit lead the way balance with spicy juniper notes
Palette : Clean, crisp and tropical. Lemongrass and citrus lead the way, with spicy juniper rolling into sweetness from the ginger and mango.

45ml Troppo Top End Gin
150ml Fever-Tree Mediterranean Tonic
Slice – Ruby Grapefuit
Method : Add ice into glass, (wine glass, goblet or old fashioned glass), add ingredients, stir to mix gin through the tonic, add ruby grapefruit slice.
